These are the customer in which mostly have the huge amounts of paperwork that is useless but should not just be thrown out. This information must be destroyed and its cheaper to get a service than to have an employee do it.

What the service does is it destroys the paperwork that is already useless to the company, but could be dangerous if it got into someones hands. For example, medical records cant be just thrown away no matter how old they are since there is very confidential information on them. As a result, it is less expensive and faster to hire a service to destroy them than to have an employee doing that.
